Animagus used to be pretty overwhelming for me, but one day it just clicked. I found that if I took the entire set of apps and copy pasted into word, I could edit them down pretty easily. I do the same thing when I sort, so it was pretty similar. I take out all the key words and leave them in a little word cloud. Once I have that I already have a pretty good idea of what the applicant "feels" like so I start going from there. Gryffindor has a wiki database, if you will, of types of animals with key words, so if I'm stuck I start looking in there to see what fits. If something already jumps out at me I simply start looking in wiki for what I think they are/specific 'breed'. I also sometimes simply open up google and search for a specific skill or idea. Once I looked for nocturnal animals and pretty quickly I found something that fit what the applicant wanted. Sometimes I also go that route when I know I want a (for example) mouse, so I can find a specific kind instead of simply suggesting mouse.
My parents show dogs, so I find that I want to always give people a breed of dog because I know so much about them. Once I finally did start voting on this, I found I was pretty successful. More than once one of my animals made it into the final cut, which encouraged me to continue voting again in the future.
